taeste and tell: healthy protein-packed snickerdoodle cookies

hello!! I'm clearly on a bit of a food frenzy this week since I just posted a recipe two days ago..but I can't help myself! I have so many great recipes to share with you guys that can help you stay on track on your fitness journey without having to sacrifice flavor!

So for today's Taeste and Tell, I'm going to share with you a recipe for Protein-Packed Snickerdoodle Cookies (or muffins if you prefer). These are also a "lite cheat treat" that I wouldn't eat ALL the time, but that can be used to crush some sweet cravings.

Enough waiting! Here's the info!

 

Protein-Packed Snickerdoodle Cookies

Makes 12 cookies

Prep Time: 10 minutes

Cook Time: 5-8 minutes

Ingredients:

1 Egg

1 tsp Vanilla Extract

1 tsp Cream of Tartar

1/2 tsp Baking Soda

pinch of salt

Ground Cinnamon (optional)

Instructions:

1.) Preheat oven to 400 degrees Fahrenheit

2.) Beat together the butter, truvia, egg, and vanilla

3.) Slowly add in the flour, protein powder, cream of tartar, baking soda, and salt

4.) Scoop out dough with a spoon and place onto baking sheet

5.) (optional) Sprinkle dough balls with a mixture of cinnamon and truvia

6.) Flatten cookies with a fork

7.) Bake for 6-8 minutes, depending on size and power of your oven

8.) Remove immediately from baking sheet and enjoy!

So there ya go! These bad boys are soo good and definitely won't make you feel bad about indulging in a cookie or two (or three!). These cookies have a more fluffy texture to them, so this dough could also be used to make muffins! Either way, I really love that these are sugar free, exceptionally low in saturated fat, and have a bit of a protein boost!!
